I have two k75 bikes-  one has the low seat option..My project bike will be getting new shoes. I run a 140/80/17 on my C with Y spokes...same profile height as original... I am thinking about 140/70/17 ( .75 lower profile) or 130/80/17 .5 lower....At 5'8" I can use all the help I can get...I do not "tour" with these or track them.....and at 150 lbs,  weight, potholes ( None in Florida ) and no mountains...I think I should be fine.

Similar boat as you, I'm 5'9" 165. Years ago shaved the seat slightly to add a silicone pad insert, and installed a YSS shock. Much better adjustability, handling and overall use enjoyment. Can put both ball's of feet on the ground, or flat foot one side. 50/50 riding time with wife & tragkorbs vs solo. *front springs should be adjusted, if new rear shock. Tires can make a height diff, I just don't notice it. Cheers
